HEADS!

The head of a fish or a sheep were often included in Rosh Hashanah seders. The sheep head in particular is a reminder of the ram that was offered as a sacrifice instead of Abraham proceeding with offering his beloved son, Isaac, on the altar.

It's more comfortable for us to include a different kind of head: A HEAD OF LETTUCE.

Heads symbolize the "head" or "Rosh" of the year, and our desire to be at the head of things, taking charge of our lives, and leading by our good example.
